  • 2 lb. of chopped tomatoes or 2 14-ounce cans of plum or Italian-style tomatoes
  • 12 ounces of fish such as tilapia, baked or grilled
  • 1 red pepper, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ cup of kalamata olives, sliced
  • ½ cup chopped fresh basil
  • Red pepper flakes to taste
  • Salt and pepper to taste


Prepare pasta according to package directions. Cook red pepper and tomatoes, if using fresh, and add oregano, garlic, and red pepper flakes. Toss all ingredients together before serving.

Spaghetti with Butternut Squash, Bell Peppers, and Parmesan Cheese


  • 1 package NutriNoodle Soybean Spaghetti
  • 1 clove of minced garlic
  • 2 teaspoons of olive oil
  • 12 oz. butternut squash, roasted and pureed
  • 2 red, green, or yellow bell peppers, cut in thin strips
  • Chopped fresh or dried sage
  • 4 oz. grated parmesan cheese


Prepare pasta according to package directions. Heat oil in a skillet and cook the garlic slightly. Add the bell pepper strips and cook until soft. Toss with the remaining ingredients and serve.
