They have 0 grams of net carbs! Each serving has 10 calories and 3 grams of dietary fiber, so you can enjoy this dish without going off of your keto or low-carb diet. 

NutriNoodles Shirataki Noodles are easier to prepare than regular dried pasta. They are already cooked and just need to be drained and rinsed. You can cut them into smaller pieces if you find that the lengths are too long when you open the package.

The rainbow of purple cabbage, green cabbage and snow peas, orange carrots, and red bell pepper, together with antioxidant-rich shrimp, delivers a wealth of antioxidants, vitamins, and minerals. Recipe for Quick Keto Rainbow Shrimp Stir-Fry with Shirataki Noodles

Makes 4 servings

Prep time: 10 minutes

Cook time: 20 minutes

Ingredients:

  • 2 packages of NutriNoodles Shirataki Noodles
  • 2 tablespoons of olive or sesame oil
  • 12 ounces of peeled, deveined shrimp
  • 1 cup of shredded or grated purple cabbage
  • 1 cup of shredded or grated green cabbage
  • ½ cup of red bell pepper, in thin strips
  • ½ cup of shredded carrots
  • ½ cup of snow peas
  • 1/4 cup chicken broth
  • 2 thinly sliced green onions, with whites separated from greens
  • 2 cloves of diced garlic
  • 1 teaspoon of freshly grated ginger
  • 1 to 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sriracha (optional)
  • Dash of stevia or other low-calorie sweetener
  • Dash of black pepper

Directions: 

  1. Prepare the NutriNoodles Shirataki Noodles according to the package directions by draining them, rinsing them with cold water, and boiling them for up to 3 minutes. Then drain them. Cut them in shorter pieces if desired. Set aside.
  2. Heat oil in a skillet. Add the white slices of green onion, minced garlic, and grated ginger. Cook for 1 minute.
  3. Add the cabbages, bell pepper, snow peas, carrots, and chicken broth, and cook for 2 minutes.
  4. Add the shrimp to the skillet and cook thoroughly.
  5. Mix the soy sauce, oyster sauce, sriracha, sweetener, and pepper.
  6. Add the NutriNoodles Shirataki Noodles and sauce to the skillet and toss.
  7. Serve with the green onions as a garnish.
