Recipe for Pasta with Sauteed Pepper, Sun-Dried Tomatoes, and Smoked Mozzarella

Makes 6 servings

  • 1 package of ThinSlim Foods Impastable Low-Carb Pasta  - Fettuccine 
  • 2 tablespoons of butter
  • 2 tablespoons of extra-virgin olive oil
  • 2 large bell peppers
  • 2 cloves of garlic, thinly sliced
  • 1 medium onion, sliced thinly
  • ½ teaspoon of sea salt
  • Black pepper to taste 
  • ½ cup of sun-dried tomatoes, chopped 
  • ½ cup of Prosciutto chopped, optional
  • 4 to 6 ounces of smoked Gouda, shredded or grated
  • 1 cup of fresh arugula 


  1. Cook the ThinSlim Foods Low-Carb Pasta - Fettuccine according to the package instructions. Boil water, add the pasta, and cook it until it is nearly al dente. Then drain it, setting aside 2 cup of the water.
  2. Set the pasta aside.
  3. Add the butter and oil to a large skillet and heat. 
  4. Add the bell peppers, garlic, and onion to the skillet. Cook until they are soft.
  5. Toss the bell pepper mixture, sun-dried tomatoes, smoked Gouda cheese, pasta, Prosciutto, and ½ cup of pasta water.
  6. Add more water if needed to thin out the sauce. 
  7. Plate the pasta and top with the arugula.
