Serves 2 as a main course


  • 1 package of Kelp Noodles by Sea Tangle Noodle Company
  • ½ red bell pepper, chopped
  • 2 tablespoons of diced red onion
  • ½ cup grated carrots
  • ½ mango or 1 small apple, sliced
  • ¼ cup creamy peanut butter
  • ¼ cup coconut milk
  • 1 clove minced garlic
  • 1 tablespoon soy sauce
  • 1 packet stevia
  • Dash hot sauce
  • Juice of ½ lime
  • Sesame seeds
  • Basil leaves
  • Optional: 6 ounces of cooked chicken, salmon, or shrimp, or 1 cup of prepared tofu


  1. Drain and rinse the kelp noodles.
  2. Mix them with the bell pepper, carrots, and mango or apple.
  3. In a separate bowl, mix the peanut butter, coconut milk, garlic, soy sauce, stevia, hot sauce, and lime juice.
  4. Dress the salad. Toss well.
  5. (Optional) add the chicken or shrimp.
  6. Serve with sesame seeds and basil leaves.
