Recipe for Low-Carb Pesto Pasta Salad

Serves: 4

Cook Time: 10 minutes


  • Pesto sauce (or you can use 3 tablespoons of store bought pesto)
    • 1 cup of fresh basil leaves
    • 2 cloves of peeled garlic
    • ¼ cup of parmesan cheese
    • ¼ cup of olive oil
    • 2 tablespoons of pine nuts or walnuts
  • 1 package of ThinSlim Foods Low Carb Impastable Pasta - Rotini
  • 2 teaspoons of olive oil
  • 1 cup of grape tomatoes, cut in half
  • 1 cup of fresh mozzarella pearls
  • Optional: Black or kalamata olives, sliced
  • Salt and black pepper to taste
  • Optional garnish: Parmesan cheese


  1. Prepare the pesto if you are not using prepared pesto. Add the basil leaves, garlic, parmesan cheese, ¼ cup of olive oil, and pine nuts or walnuts to a food processor or blender and pulse until it has the consistency of a smooth paste. Set the pesto aside.
  2. Cook the ThinSlim Foods Low Carb Impastable Pasta - Rotini according to the package directions, or boil water, add the pasta, and cook for 3 to 5 minutes or until al dente. Then drain it.
  3. Stir in the olive oil.
  4. Toss the pasta with 3 to 4 tablespoons of pesto (home made or store bought), the tomatoes, mozzarella pearls, and olives if using them.
  5. Plate the pasta and top with parmesan cheese if desired. Serve and enjoy!
