This recipe is a low-carb version of pasta salad. It has so much texture and so many flavors that you will be amazed that it can be keto-friendly or suitable for a low-carb diet. It is simple to make. You can have it immediately or refrigerate it overnight and plan to serve it the next day as a cold lunch or dinner.

Recipe for Low-Carb Garlic Fettuccine Pasta Salad with Feta, Bacon, Tomato, and Basil

Makes 4 servings

Ingredients:

  • 1 package of Carba-Nada Reduced Carb Pasta - Roasted Garlic Fettuccine
  • 2 tablespoons of butter
  • 1 large onion, finely chopped
  • 4 strips of bacon, chopped 
  • 1 lb of tomatoes, about 4 Roma or two salad tomatoes, seeds removed and chopped. (Halved cherry or grape tomatoes work well, too).
  • 6 oz. of feta cheese, crumbled 
  • 1 cup of freshly chopped basil
  • 1 tablespoon of olive oil
  • 1 tablespoon of balsamic vinegar 
  • Salt and pepper to taste 

Instructions:

  1. Cook the Great Carba-Nada Reduced Carb Pasta - Roasted Garlic Fettuccine according to the package directions. Bring water to a boil, add the pasta, and boil the pasta for 10 minutes or until just before it is al dente. Drain the pasta and set it aside. 
  2. In a bowl, mix the tomatoes, basil, feta, olive oil, and vinegar. Set aside.
  3. Heat the butter in a skillet.
  4. Add the onions and cook for 2 minutes or until slightly softened.
  5. Add the bacon and cook for about 10 minutes, or until it is thoroughly cooked. Stir often.
  6. Once the bacon mixture and pasta are cool, toss them together with the tomato mixture.
  7. Add salt and pepper as desired.
  8. Plate and serve immediately, or let cool on the refrigerator for 30 minutes or overnight.
