When people mention easy, healthy meals, they often name chicken stir-fry. The trouble is that it can seem like a lonely diet meal when served without noodles, but it can be frightfully high in carbohydrates if you serve it over noodles. This recipe uses NutriNoodles Shirataki Noodles to slash carbs and keep it keto-friendly.

NutriNoodles Shirataki Noodles are easy to use and have 0 grams of net carbs. They are already cooked and just need a bit of prep as described in the recipe. The rice is pre-cooked, just like the noodles, so it is super easy to make the swap. 

This stir fry is versatile so you can alter it according to your needs. You can use chicken, salmon, tilapia, shrimp, or even beef or tofu as your protein. If you prefer, you can swap teriyaki sauce for the mixture of soy sauce, ginger, oyster sauce, and turmeric. Any combination of vegetables works well, and mushrooms, baby bok choy, sliced celery, and water chestnuts are worth considering.

Recipe for Low-Carb Chicken Stir Fry with Shirataki Noodles

Serves 4

Prep Time: 15 minutes

Cook Time: 10 minutes


  • 2 bags of NutriNoodles Shirataki Noodles
  • 2 tablespoons of olive oil
  • 1 lb chicken breast in thin strips or cubes
  • 1 tablespoon of freshly grated ginger
  • 2 cloves of garlic, minced
  • 1 carrot, sliced thinly on the diagonal
  • 1 cup bean sprouts
  • 1 cup broccoli florets in small pieces
  • ½ red pepper in strips
  • ½ cup sliced onion
  • 1 cup of snow peas or sugar snap peas
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 2 teaspoons of stevia or other low-calorie sugar substitute (optional)
  • 1 tablespoon of chili paste (optional)
  • 1 teaspoon of dried turmeric
  • 1 tablespoon of potato, corn, or arrowroot starch
  • 2 tablespoons of cold water
  • Optional garnishes: chopped cashews, chopped fresh cilantro, sliced avocado 


  1. Prepare the NutriNoodles Shirataki Noodles according to the package directions. Drain them, rinse them, and boil them for up to 3 minutes. Then drain them. Add them to a dry skillet and cook for 3 minutes or until dried. Set aside.
  2. Heat olive oil in a skillet and add the chicken. Cook for 5 to 7 minutes or until cooked through. Set the chicken aside.
  3. Add the garlic and ginger, and cook for 1 minute.
  4. Add the carrot, bean sprouts, broccoli, bell pepper, onions, and peas, along with the soy sauce, oyster sauce, and turmeric, plus optional sweetener and chili paste. Cook for 7 minutes. Return the chicken to the pan.
  5. Mix the starch and cold water vigorously until dissolved. Add it to the pan and stir until the sauce thickens.
  6. Place the NutriNoodles Shirataki Noodles on plates. Top them with the chicken and vegetable mixture. Add garnishes, if using: chopped cashews, chopped cilantro, and/or slice avocado.
