Recipe for Low-Carb Chicken and Chorizo Penne Pasta with Sun-Dried Tomatoes and Kale

  • 1 package of ThinSlim Foods Impastable Low-Carb Pasta Penne
  • 2 teaspoons of olive oil 
  • 3 cloves of garlic, peeled and minced
  • 12 ounces of boneless, skinless chicken breast
  • 4 ounces of chorizo, diced
  • 1 ½ cups of kale, chopped
  • ¾ cup of sour cream
  • ½ cup of chopped or julienne sun-dried tomatoes
  • 2 tablespoons of chopped fresh basil leaves
  • (optional) ¼ to ½ teaspoon of red pepper flakes
  • Salt and black pepper to taste
  • Optional garnishes and toppings: sliced avocado, fresh basil, shredded cheddar cheese.


  1. Cook the ThinSlim Foods Impastable Low-Carb Pasta Penne according to package instructions. Boil water and cook it until it is nearly al dente. Drain the pasta, reserving ½ cup of cooking liquid. Set the pasta aside.
  2. Heat the olive oil in a skillet. Add the garlic and cook for a minute. Add the chicken and cook for 3 to 5 minutes on each side, or until cooked. Remove the chicken from the skillet.
  3. Add the chorizo, sun-dried tomatoes, fresh basil, and kale to the skillet, and cook for two minutes. Stir in the sour cream and turn off the heat.
  4. Cut the chicken breast into cubes or bite-sized pieces and return it to the skillet. Stir in salt and pepper to taste and red pepper flakes if using them. Mix thoroughly, then add 2 to 4 tablespoons of reserved pasta water if needed to thin the sauce. 
  5. Plate the pasta and top it with the sauce. 
  6. Add any additional toppings, such as avocado, fresh basil, or cheddar cheese. Serve and enjoy!
