You can modify this recipe if you are on a keto diet that needs a lot of fat. Just add two tablespoons of butter when you add the tomatoes to the pan. The butter will melt in and give the entire dish a creamier taste and texture.

You can add 1 to 2 tablespoons of tomato paste if you prefer more tomato flavor and a thicker sauce.

Recipe for Low-Calorie, Low-Carb Italian Shrimp Spaghetti

  • 2 tablespoons of extra-virgin olive oil
  • 2 cloves of garlic, peeled and minced finely
  • 3 Campari tomatoes, or about 5 to 6 ounces, cut into wedges
  • ¼ cup of chicken broth
  • 6 ounces of peeled and deveined shrimp or prawns
  • ½ teaspoon of oregano
  • ½ teaspoon of salt, or to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon of chopped Italian parsley
  • 1 package of Veggie Pasta Hearts of Palm Noodles by Natural Heaven - Spaghetti
  • Optional garnishes: chopped fresh parsley or basil leaves, parmesan cheese, a drizzle of olive oil


  1. Heat the oil in a skillet. Add the garlic and cook, while stirring, for two minutes until it becomes fragrant but not brown. Add the tomatoes, oregano, and chicken broth and bring it to a boil. 
  2. Immediately add the shrimp and continue to stir as they cook. Let the shrimp cook and the tomatoes release their juices.
  3. Remove the Veggie Pasta Hearts of Palm Spaghetti from the package and add it to the pan. Season to taste with salt and pepper. Stir everything together until the sauce is distributed.
  4. Plate the pasta and top with any desired garnishes, such as chopped basil or parsley, parmesan cheese, or olive oil.
  5. Serve and enjoy!
