Recipe for Keto Spinach Parmesan Fettuccine with Shirataki Noodles

Serves 4

2 packs of Nutrinoodle Shirataki Fettuccine

¼ cup of butter

2 tablespoons of olive oil

3 cloves of garlic, minced or pressed

3 cups of fresh spinach leaves

½ cup of grated parmesan cheese

Sea salt and black pepper to taste

12 to 16 ounces of salmon fillets (optional)

¼ cup heavy cream (optional)

¼ cup vegetable stock or fish stock (optional)

  1. Prepare Nutrinoodle Shirataki Fettuccine according to the instructions on the package. Drain them, rinse them, boil them, and cook them in a heated, dry skillet for 2 to 3 minutes or until they are dry. Cut the noodles if you like, and set them aside.
  2. If you are preparing salmon, heat the cream and stock in a skillet, then add the salmon and cover. Allow to simmer for 5 to 10 minutes, or until salmon flakes. Then turn off the heat.
  3. Melt the butter in a separate skillet and add the oil.
  4. When hot, add the garlic and cook until translucent.
  5. Add the noodles and stir in the spinach, allowing it to wilt. Remove from heat.
  6. Mix in the parmesan cheese and salt and pepper to taste, and plate the pasta.
  7. Top with salmon (if using) and cream sauce (if desired).
  8. Serve and enjoy!
