What could be better than slurping up a bowl of delicious and nourishing ramen noodle soup on a chilly day? Not much, especially when that bowl is low in carbs and easy to make. 

Use NutriNoodle Shirataki Spaghetti, which has only 10 calories per serving and no net carbs. Aside from being carb-free, Shirataki noodles have tremendous health benefits. This recipe calls for mushrooms, shredded carrots, and bok choy, but it’s super versatile. Cabbage and napa cabbage can swap in for the bok choy, and pretty much any vegetables can go in with the mushrooms and carrots, or instead of them. 

Chicken and shrimp are both easy and healthy choices, but that’s just the start. Salmon or any other kind of fish would be fine. So would tofu. Or you can skip the chicken or shrimp entirely and instead add an extra egg or two egg whites per person.

This recipe includes boiled eggs that have been marinated. To make the marinade, whisk together:

  • ⅔ cup of warm water
  • 3 tablespoons of low-sodium soy sauce
  • 3 tablespoons of rice wine vinegar
  • (Optional) 1 to 2 packets of low-calorie sweetener, such as stevia or monk fruit, optional

Let the eggs marinate for at least 1 hour or overnight.

You can skip the marinade if you like. To boil eggs, just cover them with water in a pot and bring the water to a boil. Turn off the heat and let the eggs stand for 20 minutes. Then drain them, rinse them with cold water, and refrigerate or peel and use them.

Recipe for Keto Shirataki Ramen with Marinated Eggs

Makes 3 servings

Prep time: 20 minutes

Cook time: 15 minutes


  • 1 tablespoon of sesame oil
  • 3 cloves of garlic, peeled and minced
  • 2 tablespoons of fresh ginger, peeled and minced
  • 8 ounces of sliced mushrooms
  • 1 cup of shredded carrots
  • 3 tablespoons of low-sodium soy sauce
  • 3 cups of low-sodium chicken broth
  • 1 head of bok choy, cut lengthwise in thirds, or 3 heads of baby bok choy
  • (Optional) 1 to 2 packets of low-calorie sweetener, such as stevia or monk fruit
  • Salt to taste
  • 10 to 12 ounces of cooked shredded chicken breast or cooked shrimp
  • 3 hard-boiled eggs, peeled and sliced in half, or with optional marinade as described above and sliced in half
  • 2 packages of NutriNoodle Shirataki Spaghetti
  • Optional toppings: chopped green onion, toasted sesame seeds, chopped fresh cilantro


  1. Prepare the NutriNoodle Shirataki Spaghetti by draining and rinsing the noodles. Boil them in water for 3 to 4 minutes, then drain and rinse. Set them aside.
  2. Heat the oil in a pot. Add the garlic and ginger and cook for 2 minutes, stirring. Add the mushrooms, carrots, and soy sauce, and cook for another 3 minutes.
  3. Add the chicken broth and optional sweetener and bring the pot to a boil. Simmer gently for 5 minutes and add the bok choy. Simmer for another 4 to 5 minutes or until the bok choy is tender. Season with salt to taste. 
  4. Place the noodles in bowls for serving and divide the broth with mushrooms and carrots between the bowls. Top the noodles with the chicken or shrimp, bok choy, and eggs. Add any optional toppings such as green onions, sesame seeds, or cilantro.
  5. Serve and enjoy!
