Recipe for Keto Pasta with Asparagus, Pancetta, and Toasted Pine Nuts

Serves 4


  • 1 package of Nutrinoodles Shirataki Noodles
  • 1 tablespoon of extra virgin olive oil (EVOO)
  • 6 ounces of diced pancetta
  • ½ cup diced onion
  • 2 cloves of diced garlic
  • 1 pound (about 1 bunch) of trimmed and cut asparagus
  • Salt and black pepper to taste
  • ½ cup (2 ounces) of Parmigiano-Reggiano cheese
  • ¼ cup of toasted pine nuts
  • ½ cup chopped parsley for garnish (optional)


  1. Prepare the Nutrinoodles according to the package directions. Drain and rinse the noodles, boil them, then heat them in a dry skillet until they are mostly dry. Set them aside.
  2. Heat the olive oil in a skillet and add the pancetta. Cook until it is crispy and then remove it and set it aside.
  3. Add the garlic and cook for a minute. Add the asparagus and cook slightly, 3 to 4 minutes.
  4. Add the Nutrinoodles Shirataki Noodles and toss while cooking. Salt and pepper the dish to taste.
  5. Plate the pasta.
  6. Top with Parmesan-Reggiano or Parmesan cheese, toasted pine nuts, and parsley if using it.
  7. Serve and enjoy!
