  • 2 tablespoons of extra-virgin olive oil
  • 2 cloves of garlic, peeled and minced
  • 1 small zucchini, chopped
  • 3 roma tomatoes, chopped and seeded
  • ½ cup of kalamata olives, pitted and sliced
  • 1 tablespoon of capers, drained
  • 4 ounces of feta cheese, crumbled
  • 2 tablespoons of parsley, chopped
  • 2 tablespoons of basil, chopped
  • 1 teaspoon of dried thyme
  • Juice from half a lemon
  • Salt and pepper to taste
  • Optional toppings: sprinkle of thyme, more feta cheese, drizzle of olive oil


  1. Drain and rinse both packages of NutriNoodle Shirataki Spaghetti with Fiber. Cut the spaghetti strands to a shorter length, if desired. Set them aside in a large bowl.
  2. Heat the oil in a skillet. Add the garlic and cook for 2 minutes or until fragrant. Stir briefly. Add the zucchini and cook for 2 more minutes.
  3. Transfer the olive oil, garlic, and zucchini to the bowl with the pasta. Add the tomatoes, olives, feta cheese, parsley, basil, and thyme. Add the lemon juice. Toss to coat evenly and season with salt and pepper.
