Recipe for Creamy Parmesan Basil Orzo with Mushrooms

Makes 4 servings 

Prep time: 5 minutes 

Cook time: 20 minutes 


  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 1 package of Great Low-Carb Pasta Rice (Orzo)
  • 2 ⅓ cups of low-sodium chicken broth
  • ½ teaspoon of garlic powder
  • 8 ounces of chopped mushrooms
  • 2 ounces (½ cup) of grated parmesan cheese
  • 2 tablespoons of chopped fresh basil leaves
  • 2 cups of fresh baby spinach
  • Salt and pepper to taste
  • Optional toppings, such as parmesan cheese, basil, or pecans.


  1. Heat the olive oil and butter in a large skillet. Add the Great Low-Carb Pasta Rice (Orzo) and cook, stirring often, for about five minutes or until the orzo starts to brown. 
  2. Add the broth, chopped mushrooms, and garlic powder, and bring it to a boil. Reduce the heat to simmer the broth and cover the skillet to let the orzo cook. Simmer for about 20 minutes. The orzo should be tender and the broth will be absorbed. You may need to add more broth if the orzo gets too dry before it softens.
  3. Turn off the heat and stir in the basil, spinach leaves, and parmesan cheese. Season to taste. 
  4. Plate the orzo and add any additional toppings, such as basil, parmesan cheese, or pecans.
