It starts with a creamy sauce with flavors inspired by pesto. Classic pesto ingredients here are basil, parmesan cheese, and garlic. If you want, you can add some walnuts or pine nuts to the food processor or blender when you make your creamy avocado sauce.

This creamy low-carb avocado pesto-inspired fettuccine can be an entire meal on its own. If you like, you can use optional toppings or garnishes. Recipe for Creamy Low-Carb Avocado Pesto-Inspired Fettuccine 

Makes 4 servings 

Prep time: 15 minutes 

Cook time: 10 minutes 


  • 1 medium ripe avocado, pitted and with the flesh scooped out 
  • ½ cup of fresh basil leaves, chopped
  • 1 cup of fresh baby spinach, plus 2 more cups, chopped 
  • 3 tablespoons of olive oil
  • 2 to 3 tablespoons of lemon juice 
  • ½ cup (2 ounces) of grated parmesan cheese
  • 1 package of Carba-Nada Reduced Carb Pasta - Roasted Garlic Fettuccine
  • Optional toppings: more parmesan cheese, halved grape tomatoes, chopped walnuts or slivered almonds


  1. Make the creamy avocado sauce by adding the avocado, basil leaves, 1 cup of spinach, olive oil, lemon juice, and parmesan cheese to a blender or food processor. Pulse it until the ingredients are combined.
  2. Cook the Carba-Nada Reduced Carb Pasta - Roasted Garlic Fettuccine according to the directions on the package. Boil water, add the pasta, and cook for about 8 to 10 minutes or until al dente. Drain, reserving 1 cup of the cooking liquid. 
  3. Quickly, while the pasta is still hot, add the spinach to the pasta and stir so it wilts. Put the pasta and spinach in a large bowl.
  4. Pour the creamy avocado pesto sauce over the fettuccine. Toss to combine. Let it sit for a few minutes or refrigerate it before serving.
  5. Serve in bowls or on plates.
