Keto-friendly Penne alla Vodka is made with low-carb, high-fiber Impastable Low-Carb Penne Pasta, plus vodka and a few other simple ingredients. You can have dinner on the table in under 30 minutes on a busy weeknight or serve this as an impressive meal for guests.

Impastable Low-Carb Pasta  - Penne sets the tone for this dish with only 55 calories and 8 grams of net carbs per serving. It has 36 grams of fiber, making it a dish that will not spike blood sugar! Most of the other ingredients in this recipe, such as onions, olive oil, and canned tomatoes, are kitchen staples.

You can modify this recipe as needed.

  • To keep it alcohol-free, just use ½ cup of water and 1 tablespoon of white vinegar instead of vodka.
  • To reduce calories and fat, skip the butter and use fat-free half and half instead of heavy cream.
  • To boost antioxidants, add vegetables such as broccoli florets or chopped eggplant when you add the tomatoes and tomato paste to the pan. 
  • To add protein, you can add leftover cut chicken, shrimp, or fish.

Recipe for Creamy Keto-Friendly Penne alla Vodka

Makes 4 servings 

Prep time: 10 minutes 

Cook time: 15 minutes 


  • 1 package of Impastable Low-Carb Pasta - Penne
  • 1 tablespoon of extra-virgin olive oil 
  • 1 tablespoon of butter 
  • 1 medium onion, diced
  • ½ to 1 teaspoon of salt, divided
  • ¼ teaspoon of ground black pepper
  • ⅛ to ¼ teaspoon of red pepper flakes 
  • 3 cloves of garlic, peeled and minced 
  • 1 14-oz can of crushed stewed tomatoes 
  • 1 tablespoon of tomato paste 
  • ¼ cup of vodka 
  • ½ cup of heavy cream
  • 2 ounces (½ cup) of shredded parmesan cheese
  • Optional toppings and garnishes: chopped fresh basil or parsley, slices of provolone cheese, chopped green onion, chopped walnuts, halved grape tomatoes 


  1. Cook the Impastable Low-Carb Pasta - Penne according to the directions on the package. Boil water, add the pasta, and cook until nearly al dente. Drain the pasta, reserving 1 cup of cooking water, and set the pasta aside. 
  2. Heat the oil in a large skillet or pot. Add the onion, ½ teaspoon of salt, black pepper, and red pepper flakes. Cook for about 5 minutes, until softened, or until the onion begins to soften, stirring often. Add the garlic and cook for another 2 minutes. Continue to stir often.
  3. Add the vodka and bring it to a boil. Lower the heat. 
  4. Add the tomatoes and tomato paste, stirring the paste in completely. Bring the mixture to a simmer. Season with additional salt if needed, stir, and cook for another 25 minutes. Remove it from the heat. 
  5. Stir in the parmesan cheese, butter, and cream. Stir in the pasta and add ¼ cup of pasta water at a time to get the right consistency.
  6. Plate the pasta and add any desired toppings. Serve and enjoy!
