A super quick and creamy carbonara-style fettuccine thatissurprisingly satisfying and packed with protein – this recipe is a go-to whenever you want ameal ready in a flash.

      INGREDIENTS

      • 1 packet NutriNoodle Fettuccine with Oat & Soybean Fiber
      • 1⁄2 cup low-fat cottage cheese (3 1/2 oz/100g)
      • 2 eggs, lightly beaten
      • 2 tablespoons low-fat sour cream
      • 2 tablespoons parsley
      • 1/8 teaspoon nutmeg
      • 4 slices uncured turkey bacon (3 1/2 oz/100g), diced
      • 3 scallions, finely chopped
      • Salt and black pepper, to taste
      • Olive oil cooking spray

        METHOD

        1.Prepare the fettuccine according to the packet instructions and set aside.

        2.In a medium bowl, whisk together cottage cheese, eggs, sour cream, parsley and nutmeg and season to taste; set aside.

        3.Heat a large skillet over medium heat and spray with olive oil cooking spray. Add the turkey bacon and cook, stirring frequently, for 3-4 minutes, or until cooked to your liking.

        4.Add scallions, fettuccine,and cottage cheese and egg mixture and stir together for about 1 minute.

        5.Remove from heat and serve immediately.
