You can save time by using a bag of shredded brussels sprouts and jarred pesto sauce. If you buy whole brussels sprouts, you can use the thin setting on a mandolin to shred them. If you prefer, you can use shredded kale instead of brussels sprouts.

Recipe for Bacon Pesto Pasta with Shaved Brussels Sprouts

Makes 4 servings 

Prep time: 5 minutes

Cook time: 20 minutes

Ingredients:

  • 1 package of Carba-Nada Reduced Carb Pasta - Basil Fettuccine
  • 6 slices of bacon
  • 2 cloves of garlic, peeled and minced
  • 1 12-ounce bag of of shredded brussels sprouts 
  • ½ teaspoon of red pepper flakes, optional
  • ¼ cup of pesto sauce 
  • Salt and pepper to taste
  • Juice from 1 lemon
  • ½ cup (2 ounces) of grated or shredded parmesan cheese
  • Optional garnishes: more parmesan cheese, fresh basil, chopped walnuts

Instructions:

  1. Cook the Carba-Nada Reduced Carb Pasta - Basil Fettuccine according to the instructions on the package. Boil water, add the pasta, and cook it for about 8 to 10 minutes or until al dente. Drain the pasta Set it aside. and set it aside.
  2. Cook the bacon in a skillet. Then take it out and save 2 tablespoons of the fat. Remove the excess fat from the bacon using paper towels. When it is cool enough, chop it up. Then set it aside.
  3. Add the garlic to the pan and heat it for 2 minutes or until it starts to be fragrant. 
  4. Put the brussels sprouts and red pepper flakes if using into the pan. Heat it up for 5 minutes or until tender.
  5. Stir in the bacon, pasta, pesto sauce, lemon juice, and parmesan cheese.
